A Table Built Around Basil

Entertaining with Simplicity: A Table Built Around Basil

There's a particular kind of pleasure in building a menu around one ingredient and letting it do the talking. That's exactly what I did for a recent lunch at home, where fresh basil pesto became the vibrant thread running through everything on the table.

Basil is one of those herbs you can technically find year-round, but it's really in the summer months that it comes into its own - fuller leaves, deeper aroma, and an abundance that makes it feel almost negligent not to use it generously. I leaned into that abundance and built a menu where basil showed up again and again, but never in quite the same way twice.

The Menu

I started with a tomato pesto salad, ripe tomatoes served over a bright, herby pesto and topped with homemade sourdough croutons for crunch. There's something about the acidity of good tomatoes against the richness of pesto that just works, and the croutons soaked up just enough of the dressing without going soft.

Next was a creamy pesto orecchiette, which ended up being the heart of the meal. The little pasta shells are perfect for catching sauce in their curves, and folding pesto through with a touch of cream turned it into something silky and comforting without being heavy.

To round things out, I made a baby gem salad with a basil oil vinaigrette. The crisp, cool leaves with a dressing that was slightly more citrussy than the pesto dishes made it felt like a natural extension of the theme rather than a repeat of it. I served a few other dishes alongside these to balance out the table, but the basil dishes were very much the stars.

Why It Worked

What I loved most about this spread was its simplicity. Nothing on the table was fussy or overworked, but having basil as the main component running through different forms (blended into pesto, infused into oil, tucked into a salad) gave the whole lunch a fun sense of cohesion. It didn't feel like a random assortment of dishes; it felt like one idea, explored a few different ways. That's the kind of entertaining I’ve been gravitating toward lately: a few well-considered dishes that speak to each other while keeping things simple.

The Table

Presentation played its part too. I served everything on white porcelain from Costa Nova, the Portuguese tableware brand known for its clean lines and matte, almost stoneware-like finish (I found mine at Roomers, which stocks the collection). The plain white backdrop let the food do the work - the deep green of the pesto and basil oil practically glowed against it, and the whole table felt fresh and uncluttered without trying too hard.At the end of the day, it’s a fun way to change up your entertaining

pick one great ingredient at its peak, let it move through the menu in a few different forms, and keep the table simple enough that nothing competes with it. And this meal was a small reminder of how far that approach can go.
